This is a unique and delicious piece of pork meat. Perfect for charcoal or wood grilling for additional flavor.
This cut is/was amazing. It's possible that it works best with argentianian/uruguayan/brazilian style grills, unsure how it would fare on a gas grill; small coal grills would probably be ok.
The cut is thin, much thinner than cow matambre/flank. The cut, layed out flat, will cook rather rapidly and reach a delicious crisp on both sides; I ensure this is the first thing to come out as an appetizer for me and guests. It's slightly fatty and it is great when served with a bit of fresh lime juice over the top, which helps 'cut' the fattiness.
