Lamb
Origin: Uruguay
The Lamb Shoulder Oyster Cut, also known simply as the "oyster cut" or "oyster steak," is a lesser-known but flavorful and tender section of the lamb shoulder. It is named after its shape, which somewhat resembles an oyster shell. This cut is located within the lamb shoulder blade and is characterized by its rich marbling and succulent meat. Because of its tenderness, the Lamb Shoulder Oyster Cut is well-suited for quick and high-heat cooking methods such as grilling, pan-searing, or broiling. It can also be marinated or seasoned to enhance its taste, and due to its small size, it cooks relatively quickly.

Very tasty!
This lamb oyster cut was fresh, tender, and flavorful. It was easier to cook than I thought. I placed it in a cast iron skillet with some water and aromatics. Then, I cooked it in the overn for 320F for 2 hours. Finally, we let the lamb rest before broiling it for a few minutes. I'm glad I bought two pieces because I want to cook another one.
I purchased this for my friend and both her and her son was so impressed how flavorful and tender. I spoke with one of the Managers and she was extremely personable and professional. I recommend ordering from this company. They definitely stand behind their product.
The meat arrived intact and still frozen solid. There isn't a trace of dirt or fur. They are clean as can be. I have not had a chance to cook them just yet, but I have faith that this will be some of the best lmab I will ever taste. I have a vadouvan curry rub waiting to coat it with.
This is my second order in the U.S., and one of many, many over the years at their Butchery overseas. What a treat to enjoy such great quality fine steaks and lamb. These are all grass fed, free range cattle from the the Pampas, the great plains of Uruguay and Argentina legendary for their finest cattle. Quality service, well so you have an idea, my only other alternative in my Philadelphia region are the cuts at Whole Foods. And I'm glad to report not only it's better, but you actually save some money per each pound, see for yourself. Finally every last attention to detail in preparing and presenting your order makes it clear you are dealing with a great supplier of quality meats. Well Done Cordobés! And to all of you out there: Enjoy!
