Cut the roast into four thick steaks. Lightly seasoned and grilled hot, fast, and rare/medium rare. Flavor and tenderness was amazing - you could pay $50 (minimum) at any fancy US steakhouse for one of these steaks, and it wouldn't be close to as good. Thank you Cordobes for bringing in this wonderful, healthy meat. I'll be ordering more.
