This steak was huge I had no idea when it came out of the package how big it was going to be other than lengthwise I had to cut it in half in order not to waste any of it. Yes, I froze the other half again hope I didn't ruin it only time will tell and I have the knowledge there's another piece in there waiting on me. This was expensive to me but well worth the money I will do it again. It is so tender and so flavorful can't beat it in my book.

I have looked for Chinchulines and am so happy Cordobés has them. Tastes like I was back in Argentina!

I purchased two tri-tip roasts, each about 3lbs. I noted the butchering was clean with about a 1/4" fat cap. My initial recipe was to reverse sear the roast after a 1.5 hour smoke, which turned out amazing. The texture and flavor was most like grass fed beef. Next roast will be marinated. I will be back for more in their very clean and professional shop.

Hands down, the best sausage ever. No articial junk added, just pork, blueberries and spices. The sweet/savory mix is perfect.
